I’ve noticed over the last couple years that the higher the lactose content the more irritable my stomach is.  I enjoy it in small doses, because I can’t pass up a good quality Chacurtie board but when it comes to my drinks I try to opt for an almond, coconut or walnut milk.

I’m all about spices for baking and cooking.  Truth is, I’m more of a cook than a baker.  It’s the whole having to do exactly what something/someone says with baking where we don’t get along.  LOL.  I’m a free creative spirit that likes to spice things up (literally!) and create as I go.  But these drink recipes are so simple and taste good.  My Pumpkin Spice Latte is the same, easy and healthy!

How to make a peppermint mocha at home

Peppermint Mocha Latte

How to make your own Peppermint Mocha

Ingredients

  • ½ cup unsweetened vanilla almond milk or milk of choice
  • 2 Tbsp. unsweetened cocoa powder
  • ¼ tsp. pure peppermint extract or a 4-5 drops of peppermint liquid stevia.
  • 1 cup strongly brewed black coffee or 1 shot espresso
  • ½ tsp. raw honey or a few drops of liquid stevia optional, if you add peppermint liquid stevia do not add this option of regular stevia, it will be sweet enough
  • 1 fresh mint leaf for garnish; optional for you fancy pants

Instructions

  1. Bring milk, cocoa powder, and honey/stevia (if desired) to a boil in medium saucepan over medium heat, stirring occasionally. 

  2.  Remove from heat; mix vigorously with a whisk until frothy. 

  3. Combine Coffee and milk mixture into a blender for about 1 minute to create frothiness. 

  4. Pour your Peppermint Mocha Latte into a large coffee mug. 

Recipe Notes

You can garnish with mint leaf, chocolate or crushed candy canes  if you are feeling super fancy!

I’m clearly a coffee junkie.  It brings me happiness.  My mornings with my coffee, a warm blanket and my planner/journal set me up for a great day.  What is your go to coffee?  I’m not always this fancy, my regular is usually Starbucks Keurig Dark Roast with a splash of Caramel Macchiato creamer and a dash or two of cinnamon.
